Quinoa Granola

Quinoa Granola

I had no idea uncooked, baked quinoa was so good! This sweet treat comes together easily, and is a great snack or breakfast. Add any dried fruit or cacao nibs if you like.

  • 1 cup uncooked quinoa
  • 1 1/2 cup pecans, chopped
  • 1/2 cup rolled oats (gf)
  • 1/4 cup chia seeds
  • 2 tbsp coconut sugar
  • 2 tbsp coconut oil
  • 1 cup pure maple syrup
  • 2 tsp pure vanilla
  • Pinch of sea salt
  • Optional- chopped figs, raisins, cacao nibs, dark chocolate.

    Preheat oven to 325 and prepare a sheet pan with parchment paper. Warm coconut oil and maple syrup. Mix together all dry ingredients. Stir in warm maple syrup, coconut oil, and vanilla. Fold in dried fruit or cacao nibs. Spread evenly on a parchment lined sheet pan and bake for 15 minutes. Turn pan around and bake for another 10-15 minutes or till edges are brown. Allow to cool, drizzle with dark chocolate, and break into pieces. Enjoy!
